Oxygen was more plentiful that's why organisms grew to such extremes.

Modern humans absolutely could not survive in that environment. Our bodies could not adapt to the different levels of oxygen.

This is not true, newest studies suggest that the oxygen level was much lower for the Jurassic period, and slightly lower for the Tertiary period (where Ray stranded). So while we would have problems early because of LACK of oxygen, later would be managable.
