What was the smoke bottle Money put in the old man's room? Presumably it was to knock him out so what it ever explained why it had no effect on him?

Well he was clearly an army veteran, theres a good chance that he had exposures to different kinds of toxins before, if that wont suffice then he just held his breath, not only was he trained to hunt, he was also trained to survive
It is possible that when he turns the TV off he hears the hiss of the gas coming from the bottle. This could be combined with his ability to recognise a toxin.
