I couldn't help wondering if she was so accustomed to losing one-on-one fights at this point that she never expects to win
Yeah. She was definitely accustomed to losing. That's why she is mostly robotic. Every time Gamora beat her in a fight/duel, Thanos would replace a part of Nebula's body with robotic parts. And by the look of her body when she gets pulled apart when tortured, she has lost a lot. A LOT. So she definitely has a terrible win-to-loss ratio.
