It seems like she's always balancing her budget or something. And she's requisitioned a whole booth in the RR to do that shit. Can't she go in the back in a proper office, and maybe crack open an Excel spreadsheet, or maybe some Quicken?
There are lots of bills at the Double R. The rest of the time she listens in on conversations and makes facial reactions to what she is hearing.

shareI'm not surprised. It looks like she's using an old rolodex to do the math, somehow. Probably has an abacus somewhere. And I'll bet all her pink file folders are filled with IOU's and little notes about who they gave free pie to, or who didn't have $5.45, they only had 3 bucks but don't worry about it, honey, you can pay it back next time.
