Why does she always have this look on her face like she's flying out on vacation and about half an hour into the flight, realizes she'd forgotten to turn the oven off?

Because she's always been a horribly wooden actress, and always will be.

Yeah she was really wooden when she broke down crying about her son missing (sarcasm).
She does have "that look", but keep in mind that actors don't get to choose their lines and roles, if they want to eat, esp. women in Hollywood.
She has a quiet intensity to her, and natural beauty. She was great in Walking Dead, too.
But she is well-cast here, as a loving, but concerned mom, who blames her husband (at first) for losing their son.
Entertaining movie!
She was not "great" in The Walking Dead. There is a reason her and Andrea are two of the most despised people among TWD viewers. People couldn't stand Callies as an actress or the character and same with Andrea. Callies has "psycho-eyes," no other way to describe it. Doesn't matter what the scene calls for emotionally she has this psychotic look on her face like she's about to stab a puppy.
