I assume the K in K.C stands for Kathy. But then what does the C stand for???

What is funny is none of you are right.
In the Pilot, she tells the male teen spy her name is Kacey... But with no "y" to try and sound like an airhead because he likes dumb & conceded girls. This makes sense because then the title of the show is a play on her name e.g. Kacey Undercover.
"K.C with no Y" as in "My name is two letters.. a K and a C."
KC standing for Katrina Charlotte makes WAY more sense than your assumption that you are trying to pass for as fact.

Where are you getting "Kacey" from, lol? The scene you referenced was trying to sound like an airhead, like you said, but I don't think it was relevant to anything else. share
There are lots of other names which start with K, like Karen or Keisha, for example.
And there are many names which start with C, such as Constance, Cordelia, Cornelia, etc.

In "Tightrope of Doom part 2" her name got even longer.
I think that when being held as a hostage Marissa called K.C. "K.C. Coretta Scott King Cooper". Thus it would seem that her parents named her "Kathrina Charlotte Coretta Scott King Cooper".
