what's Hollywood's deal with glorifying asssassins?

Assassins are pretty much serial killers but instead of killing for thrill, they kill for money.
They are pretty much scumbags who have no regard for human life. Pay them enough money, they'd whack their own grandmother.

So why does Hollywood insist on making so many assassin movies where we are supposed to find the assassin cool, likable and even root for him when he is wronged?

Maybe because of Jason Bourne or Assassination Classroom, I guess.

Well, most of the 'assassin' protagonists (in fact practically all of them) kill other criminals and scumbags, often far worse than them.

In this movie for instance, they make it a point to explain how the two targets Bishop eliminates are the scum of the earth while the third guy he doesn't eliminate but instead makes the deal with is an 'arms dealer with a cause' who is portrayed a tad more sympathetically, even humorously, than the other two by Tommy Lee Jones.

It comes down to what TV Tropes would call Grey and Grey morality (or rather Black and Grey morality).

Speaking of which, I wanna see Nagisa Shiota team up with Jason Bourne and Arthur Bishop.

Assassins are cool.

Also most movie assassins are nothing like actual contract killers.

Most contract killers are people who are down on their luck, approached by a third party, and offered a considerable sum of money to kill someone knowing that they will go to jail.

And that is how I saved them and became KING Dumbass!!!
