Lava demon and the green woman are from Fantasia 2000.

The Lava demon and the green woman resembles very much of a sequence in Fantasia 2000. There was a volcano eruption in form of a demon and after that eruption the land was healed by a green woman. Why did they take that instead of creating a creature?

They probably didn't. Mythologies and folklore of other countries have different stories and explanations of how things operate on Earth, tell of their history, and explain customs.

Te Ka and Te Fiti are altar egos of each other. Te Fiti share some similarities with Pele, a Polynesian goddess of volcanoes.

The Sprite and the Firebird (the lava demon in Fantasia 2000; also known as a phoenix in some cultures) were two separate entities, and both were adapted from Russian fairy tales.

What we do in life, echoes in eternity.

Because Polynesians believed in various gods and goddesses that were personified via nature. Making a "creature" would be less in line with their mythological beliefs.
