I'm Spanish and I drink mate. And he's a lot closer to those places. So, a little unusual, but not that much. He must have picked it up from travelling and spending time in those countries.

I don't see why a Mexican wouldn't pick up the mate habit, incidentally Gael Garcia's (ex?) long time partner is Argentinian, so it may be the actor himself who is an avid mate drinker. And I also don't see why a European wouldn't get into it either, I'm European and I drink it, though not as a habit.
I live in England and there's a few trendy/"hipstery" coffee shops that have introduced mate and people are actually getting into it. That's globalized society for you - not a bad thing if you ask me.
As for myself, I grew up watching a lot of Argentinian TV and reading Che Guevara's biography again and again, so I always wanted to try mate ;)
Well... I´m not the best guy to talk about mate, because I don´t drink mate. Here I´m a very very strange exeption because almost 100% of people drink mate.
Wrong. The writers are well aware that mate is not a traditional Mexican drink. Early drafts of the script had him guzzling atole and munching a tamal.
Mate would be a caffeinated beverage choice for an elite hipster. It signifies sophistication, travel, and embracing exotic cultures. The writers were signaling that Rodrigo is, among other things, hip. (It might even have been the actor's input that made mate the character's choice.)
And I can confirm that Mexicans drink Mate. I've even seen it in teabag form at one of the upscale supermercados where I live.
I just found out there's a mate "lounge," not too far from me and I live a fair distance from Latin America haha so it seems like it's going fairly mainstream!
This blows my mind! I know of many Hispanics who drink Mate...Mexicans included. I'm Honduran-born; you can say I'm a steak and potatoes kind of gal or a traditional Thanksgiving dinner...I'll pick that over pork tamales any day ?
At one point during Season 1 if I remember correctly, Rodrigo explains that he played in an orchestra in Buenos Aires, so even though he's not from ARgentina, if he stayed there for some time, he could have started drinking mate then.

Well, this is the same situation.
Mate is not a very nice drink (I don´t like mate, but I´m a rare exception), if you don´t drink mate when you was a child is very strange that you drink after.
You can drink (obviolusly) but rarely like a daily habit.
Actually your Chinese example with the chopsticks is a very plausible scenario; I am Colombian and I drink mate, fair enough, you'd have to be exposed to it and also (more important) be leaning towards trying new things. I am one of those, I never knew about it in Colombia but when I went to College in USA I met a guy from South Dakota who was in Spanish classes and spoke very good Spanish since had been in Argentina a few months and he picked up the Mate habit and now loves it. He even gave me one of his many gourds with the bombilla for me to keep and since I was hooked, although I don't drink it everyday. I lost the gourd moving around, so I still make it but in a non traditional way, I hope I don't offend any Mate purist here but I got a Clever Dripper from Starbucks and that's what I use now. I also got exposed to many other things in USA that weren't available in Colombia, and aren't American, like Sushi, Mexican food (believe it or not never had it before), Indian food, Vietnamese, world beers (IPAs, Stouts, Check Pilsners, etc). America (or USA not to offend my fellow latin Americans) is a cultural melting pot if you are at the right place and time and open minded.
