After Shirley found the remains of the mammoth in the storage locker she visited Elena and kissed her on the cheek. Shirley like Liam was infected almost instantly, we saw Shirley cough as she left the storage locker w/the mammoth remains and I suspect passed it to Elena during that aforementioned visit. However for whatever reason it took longer for Elena to go full on Mammoth Flu psycho.

Ronnie was in the closet and Elena heard the buzzing. Shortly after that she was infected IMO.
 

I agree, I think she became infected from Ronnie being in the house.
