Indeed they are very entertaining, as is the old man who shows up working in the reception of the governor's building and in the hotel bar, midway through this series.
And indeed, of the police left on the island, i agree Ingrid would be the best choice for sheriff, but she still wouldn't be a good choice..., while she'd surely reaction to every report, unlike Eric, she's almost as surely overreact, but an overreaction is still better than no or a really slow reaction :) .
Spoilers for the full series two ahead...

While i know it's only a tv show and partly written for comedy, but in real life, Ingrid and the other officers would be lucky to keep their jobs, if not land themselves in prison.
I'll focus mostly on Ingrid, as you marked her as being possible sheriff material - in the first episode of this series we see her (like all the officers in the town are, really quick to pull their guns), pulling hers on two kids shoplifting and as we find out in the next episode, one of them was her own brother!
When said brother's belt shows up at a crime scene, she tries to hid it.
When she confronts and eventually arrests her brother, it wasn't a proper arrest.
Sure she only half heartedly did it, not wanting to believe he was guilty, but if he had been, her arresting him while saying, "I'm arresting you on suspicion of murder and *beep* your rights!", could have gotten the case thrown out and again, sure if Rune even though to bring it up, it would have been her word again his, but she'd have had to purger herself, to make any conviction stick.
And in the scene just after she arrests him, she clearly didn't lock the police car doors, and let, sure her brother again, but still a suspect escape :) .
Lastly on Petra keeping her job/staying out of prison, of course she's a borderline alcoholic (she actually says, "I'm an alcoholic..." in a low voice when she's among several of the other officers at a party in the bar, that none of them hear) and we see her drinking and playing loud music in a police car late at night, clear for anybody to see, sure she could get treatment for her heavy drinking and learn to show a better example in and out of uniform, but the biggest thing she does wrong is barely protests and doesn't even report or challenge him about it later, when she comes across Dan murdering someone in the police cells (because she loves him :) ).
Even short of shooting at or wrestling with Dan when he was on top of the suspect and if we accept that she was frozen in shock and not wanting to shoot the man she loves, if there'd been a scene just after in which she challenged him, saying "You just murdered them!, hands up or i'll shoot" and he convinced her that it was an accident in trying to stop him from escaping, or he says to her, "Yes, i did kill him, but if i hadn't he would have killed us all before too long - it was either that or let many more innocent people die." and she accepts that, but it was almost like she pretended it wasn't happening... :) .
