I feel like John Ruth at least would've been able to tell there was a cellar beneath them, and insisted on checking it for himself. Of course that only would've brought the mass violence sooner.

for some reason i thought Sam Jackson would know it was there since he was sort of a regular (?)
but yeah it would've just ended the movie on the spot.

My guess is the winds from the blizzard howling outside made John Ruth less likely to pick up the notion of a cellar.
