i don't know much about iron fist, but I recognized madame gao and I know the hand is gonna be in the defenders. was iron fist trained by the chaste? I know they live in the Himalayas mountains and train in mystic martial arts stuff.

My guess is that the Iron Fist and the Chaste are two separate entities that are both sworn to defeat the Hand. Otherwise why would they bother training normal people when they have a mystic warrior destined to defeat the Hand?
Or maybe there hasn't been an Iron Fist since Orson Randall and the Chaste train warriors in that absence as a last hope.

if the hand are immortal i'm surprised no one in any of the 'good guy' orders try to learn the same secret. I also wonder if any of these immortal masters are not in any future comics. I know apocalypse lives atleast 2 thousand more years, yet I never see any of these guys in any future timelines

It's suspected by many viewers Gao is the Crane Mother, a character from that whole mystical realm, because she stamped the drugs with the symbol of another character, the Steel Serpent.
To my knowledge the Hand and the Chaste are separate from that. Gao does not seem to be allies with the Hand (unless she's just at odds with Nobu) or with the Chaste.
Of course the Chaste might have some connection to K'un-L'un with the whole "when the doors open".

No. The Chaste are normal people and international group who specifically recruit dark individuals to help fight against The Hand. They have nothing to do with Iron Fist.
A potential Iron Fist is trained in K'un-L'un by martial artists. They are most likely trained to specifically kill the demon that The Hand worship known as The Beast.
