So it's a wonderful and beautiful film, but what happened to Salma Hayak's character? Did I miss her at the end? I only saw her son, who I guess was actually the peasant boy? Is it supposed to be implied that everything just goes back to normal?

She was the weird monster that was trying to hurt Jonah (the peasant boy), which Elias (the prince) killed. The scene after Elias returns Jonah to his home shows the dead monster transforming into Salma Hayek.
Before that, when Elias disappeared, the queen (Salma Hayek) asked that magician- or whatever- guy from the beginning to help her get him back, and he said it had a cost. I guess that was transforming into the monster.
Also, the son at the end was the real prince. The peasant stayed with his family.
