Who is "Don"?

Don is sometimes referenced throughout the film; most famously when Hugo mentions his name alongside all the other members in the poem/song he sings for the boys during the dinner. But who actually is he? He's also in the credits but I have absolutely no idea who he is! He's not a current member of the club so I thought it was the landlord or Lord Riot but it is'nt

The thing is that while he mentions Don or Dom, he doesnt mention George(Beaulfort). This may be because they changed his name during the course of shooting the movie, or just an honest mistake. Maybe its a nickname for him?!

Anyway, the guy you're referring to in the credits, is the headmaster or whoever was sitting next to Hugo when he suggested playing "spot the virgin".
