Why the need for blood farms and killing people?

Because the Master and all the vamps do not see humans as anything but food and vastly below them on the food chain. Probably the blood farms would be used to keep the human prey alive anyway. Feed them up and bleed them, repeat etc.

But the process they showed was complete blood draining and disposal of the body.

Because the show needed a gruesome scene and in 10 of 10 cases it will go for the fast payoff rather than building up anything remotely coherent or meaningful.

I mean in the book they kept the humans alive to be bled on the regular. I was a bit confused about the slaughter house.

It's sloppy writing.

Obviously, the more efficient way to 'farm' human blood is to keep them alive and producing more blood. Humans can replenish a pint of blood in 24-48 hours. For safeties sake, it's best to wait a month between donations, but you could probably shorten that to a week if you didn't value the life of your livestock. It makes no sense to kill a human for a one-time payoff of 10 pints of blood when that same human could crank out 50 pints per year for a few years, or 12 pints per year for decades.
