The dude just saw his mother die Regardless if she was a muncher or not, she played the mother part well enough that Zach didn't care. All he knew was that his loving mother was back. He doesn't even believe his mother is gone for good. He wants them to cure her not kill her.
Explain his frightened reaction every time she looked at him hungrily. Including the moment minutes before he nuked the city when he suggested they go check on The Master since she said she didn't hear his voice anymore and then started preparing her stinger.
If he honestly thinks there's nothing wrong with her, he wouldn't be afraid of being turned into a vampire. If anything, that would bring him closer to her.
Yet, here is his father, shoving a knife up into her brain.
Because his "mother" attacked him. Like she's done in the past. Because that's what she is now, she's an inhuman creature who repeatedly tries to kill his father.
When he yelled "DON'T, STOP!" at Fet's place, his mother didn't stop trying to kill him. When he yelled "DON'T, STOP!" in the tunnel when Nora was trying to protect him, his mother used that distraction to kill her. When he yelled "DON'T, STOP!" in Palmer's office, his mother continued to try to kill his father.
Even when Eph stabbed her, she was in mid-stinger attack. It's not like he incapacitated her and then brutally finished her off without thinking about his son's feelings. He was defending himself 100%.
Any kid would go crazy in this scenario.
Kid's already crazy. He killed an innocent man by ordering his monster pet to kill him.
As to setting off a Nuke. Well he did have the button in his hand. Not like he ran downstairs to the lab to grab the button to detonate the warhead. If he had a glass in his hand, he'd probably had thrown it onto the floor. If he had a rock, he'd have thrown it at a window. It's just coincidence he had the button to a nuke in his hands.
Before they went up to Palmer's office, he was leaving the room and turned back to grab it. He knew what it was. He knew what it was for. He knew that pressing the button would detonate a nuclear warhead in New York City.
He had it in his hand because he wanted it in his hand. If he never intended on using it, he wouldn't have picked it up. It wasn't an accident or a coincidence that he was holding a trigger to a nuclear bomb, he was holding it because he was in on the plan and was completely fine with dooming the human race.
Zach is a monster, plain and simple. He chose the vampires over all of humanity.
