Why do people always assume it's the people who are a little weird who do things like this? I'll bet if there were ever a killer around here where i live, there'd be people pointing the finger at me, without evidence. Just assuming.
Watch some true crime. It's often not so. John Wayne Gacy was a successful businessman. Ted Bundy, good looking ladies man.

Long story, short: according to Harrison, Letby 'in many ways' fits the profile for a female serial killer, around 40% of whom are nurses or other healthcare workers.
Yes, she doesn't exactly fit the profile -- but, as you suggest, her 'ordinariness' shouldn't come as a great, thunderous surprise.
