If that guy at the beginning got the license plate number, would it have helped the police track down them?

The cops didn't even ask "Did you get the license plate number"?

It wouldn't have mattered because they buried each of the cars used in the robberies on the ranch.

But won't the license plate tell whose car it is?

All stolen cars. They had some sort of arrangement with the car dealer they showed when they bought the truck when they ask him to wait until Friday to report the car stolen.
