Why was there water in Camille's coffin?

And it was a substantial amount of water.

Were there signs of her having escaped her grave? Was any ground unearthed? Did she just disappear and re-animate elsewhere?

As much as I enjoyed the show, some things weren't thought through.

I think everything in this show is carefully thought through. That's why it takes them forever to release, they don't do lazy writing. That being said the exact explanation is yet to be given, but it all leads to the dam, also why all of the returned reanimate at the lake. More I watch season 2, the more I appreciate season 1 lol

The water definitely has SOME supernatural elements tied to it. It caused a deer to reanimate and Serge to hallucinate during his childhood, according to his diary. It also guarded the space where the 'portal' lay for the returned, filling the space entirely (and in the process, reverting the process of the flooding). Milan's cult believed it would 'wash away' everyone's sins. Beyond all that, it could simply be a creative choice by the director to specifically put the water in her grave.
