Audrey
First, I don't even remember her mom dying, unless she died on her sleep and that's why she wasn't moving. Second, why the hell would Audrey start eating her mom? She was that famished? I swear I saw them bring food to the prisoners.

shareI was thinking that she resulted to cannibalism due to not being well fed, but like you say, they were occasionally given food. Maybe the returned start reverting to it when they are not close to each other or something, like how they start developing wounds when they are too far apart. Of all the returned Pierre had chained up down there, Audrey was definitely down there the longest so she probably started developing something from being away from the others for too long. When she said her mom was not moving, I figure maybe her mom was going into some sort of shock, but I'm wondering what else could have led her to dying.
Regardless, when it comes to the season finale, for some reason I felt sorry for Audrey the most out of all The Returned.
I don't think she was dead when Audrey started eating her. It looked like Sandrine was in some kind of shock after finally realizing what a jerk she'd been.
I'm not sure if they were feeding Audrey anymore. That was after Serge attacked Yan, and they seemed a lot more hostile with Audrey when they brought her in.
Didn't Audrey's mom get shot by the creepy cult leader (Pierre?)? I thought she dared him that he wouldn't shot her, and he did.
Hey, Rocky! Watch me pull a booger out of my nose!
I don't think so. I remember Audrey telling Julie that her mom won't wake up and then like the next episode she started eating her and Julie screamed and then the guard shot Audrey.
shareI just rewatched and I don't think so either.
She essentially forces her way into the cell with a gun. The next we see her is when Julie is put in the cell. At that point she's chained to the wall and not responding to Audrey's pleas. But we don't see her being shot and she doesn't look wounded to me. She looks depressed and catatonic.
The returned are all shown eating ravenously and never sleeping, that is until they end up with isolated with the horde. Audrey probably ate nothing for the entire time her mother was guarding her. Plus being away from the horde made her body decay, so possibly brought her closer to some animal-like state.
shareSandrine was shot.
shareSandrine was not shot. I just watched season 2 - it never showed anything happen to Sandrine other than she gave up after realizing how wrong she had been.
shareSandrine was shot.
I just watched the last two episodes of Season 2 tonight and unfortunately just deleted them, so I can't quote the subtitles verbatim, but we see Pierre talking outside of the Helping Hand to the younger guys who had been inside monitoring Audrey and Sandrine, and one of the guys says something like "She just went crazy, we had to kill her, we didn't have a choice".
Remember, in the last scene showing Sandrine alive, she had been waving the gun around and actually fired it as it appeared the young men were backing out of the room. So her death was something that apparently happened off camera, but based on the conversation outside with Pierre, Sandrine was definitely shot.
And keep in mind the later scenes where Pierre keeps insisting that Sandrine "wanted to die" and "wanted to be with her daughter", and everyone keeps accusing him of lying, accusing him of being responsible for her death. I don't know that those conversations would have even been that calm if they had feared killer flesh-eating zombies among them. I think they finally saw Pierre for the fearful zealot and loose cannon that he was (and was inspiring).
Damn - no I am going to have to watch them all over again. I am still doing a rewatch of Burn Notice followed by a rewatch of Game of Thrones, so Returned will have to wait. Would be wonderful if a new season popped out while I was waiting, lol.

They were not talking about shooting Sandrine (Sandrine was defenitely NOT shot), but they were talking about shooting mrs. Costa.
I think the most important part of why she descended into an animal state is that her mother essentially wasn't holding her to a human frame of mind.
Remember there was some discussion (from Virgil) that the returned who were more human had people waiting for them. The ones that were more detached and those more animalistic didn't.
Audrey's mother was mostly not there for her. She didn't believe it was Audrey. She gave her up to Pierre and some pretty awful treatment. And then when she finally comes around and accepts Audrey as her daughter, she's really fading herself (physically and mentally). Audrey tries to reach out to her but once her mother is gone, Audrey's hold on her own humanity is gone as well.
