I don't think they're actually immortal, they just live a REALLY long time. Did you see Vlad? He was ancient. They age very slowly, but they do age, and eventually the body just gives out when the organs and stuff stop functioning. Vampires in this series are the species class, not the undead class. They're not the living dead, they're alive, but have very long lifespans. The undead vampires are different. They never age because they're dead and locked in time. But since the vampires in this movie aren't the undead kind, turning Johnny wouldn't mean he has to die. That's how it works with the undead vampires. Species vampires carry a virus that mutates humans into vampires.
The way I see it, one of them, either Mavis, will turn Johnny eventually. She loves him as he is, and as Johnny stated about his family, he's proud of his human family, so they're just waiting until they have to before turning him. He's only in his 20s. I'd say he's about 27 in this one since Dennis is 5. They may also have been waiting to see if Dennis would be a human or not before making any decisions. So unless Mavis wants to lose her husband and Dennis wants to lose his father in 60-70 years, they'll definitely turn him. This might actually be the plot for the 3rd film if they do one.
