I mean maybe -just mayyyybe -it was for the sake of the assumedly stupid US audience?.... but to have Miller explain to him what it was!!!!! The dammed thing has been around for decades. It's a French word!! He is supposed to be the worlds Ninja Chef!
Oh please. He got to a 2 star level in France and never even tried the process if only to reject it? It was poor exposition to say he needed to adapt. The problem is they had Miller actually explain it!
And yet early in the film--it's just a throw-away line--he makes a comment about how people today cook in plastic bags, so it would appear that he knows what sous-vide is; he's just resistant to using it.
Thanks for bring this up. When I saw that scene, I thought to myself "isn't this sous-vide, how could he not know this?" Even I know it from watching Top Chief. That makes zero sense.
Yeah it was ludicrous. Seemed like a lot of things got dumbed down for the audience. Guess the director forgot most people watching this would have at least basic culinary knowledge.
