He was French-trained only in the sense that he worked in one, admittedly old-school French restaurant, for one guy. He was not Cordon Bleu.
He should know what it was, but it's possible that he never tried it and would have to be shown how.
Oh please. He got to a 2 star level in France and never even tried the process if only to reject it? It was poor exposition to say he needed to adapt. The problem is they had Miller actually explain it!

shareThanks for bring this up. When I saw that scene, I thought to myself "isn't this sous-vide, how could he not know this?" Even I know it from watching Top Chief. That makes zero sense.
