When the Catfish lures them to some sparsely populated area and the music gets all creepy. I always think for a second that a sniper is going to get them.

I don't think they would air the episode if Nev got killed. Usually when someone on a reality show dies they just cancel the series. They would never show Nev getting killed on camera.

It's been reported that they find the Catfish, get them to sign an agreement saying they agree to be filmed, yada yada yada.
Their detective work to find the Catfish is still real and legit, from what I understand, but the Catfish has to sign a ton of legal documents and stuff to even get on the show, or else they can't do the episode.
Reality TV isn't as real as we think. There's a lot of legal stuff, documents, etc. that go into it, it sort of takes the mystery of it out.
