Mr. Weston's Ending (SPOLIERS)

Mr Weston's character was deeply flawed initially then he later turned into an outright villain.

He blatantly flirted with Clara, tried to blackmail Clemence and tormented Katherine mercilessly... Not to mention how horrible he was to his own daughter.
He made one mention to KAtherine about happier times when it was just them together, but otherwise he was like the devil. He seemed to relish her terror of being separated from Flora.
And he pretty much demanded that Clemence become his mistress or go to jail.

Then at the end are we supposed to assume that because Katherine appeared and promised to be a devoted wife for him and their unborn child, he did a complete 180 and just decided to be "good"? Was the implication that he was "acting out" (huuuuge understatement) because he just needed KAtherines undivided love?

It seems like the writers pulled their happy ending out of nowhere...

I think your last sentence may be hitting the nail close to the head. Maybe the writers were more grasping at straws when they found out they had to wrap up this story as best as possible.

Plus, really, could there ever have been a happy ending? Unless Tom died suddenly and that still wouldn't be happy. It's not like Katherine would have had the option of divorcing Tom then taking Flora and the new baby far away from him. The ending I got out of it is that Flora's life will be stable for the time being as Tom will be walking on eggshells so as not to hurt or upset Katherine. Once the baby comes Katherine will likely be able to keep her promise to Flora about being there for her because Tom won't be able to separate Katherine from their child(ren) and separating Flora from her younger sibling(s) wouldn't be seemly either (especially seeing as she's a girl and will deal with some degree of the caring).

I also don't think Tom was showing how he could separate Katherine from Flora to torment her, although that's what the effect was. He was showing Katherine that he could disconnect Flora from Katherine, both physically and emotionally, easily. That that was the level of control he had over her life and the things in life that she truly cared about. He was reminding her of how lowly her place is as a woman and as his wife, and showing her what he could do if she dared put a toe out of line.

My thoughts exactly. There was one time he had seemed to show that he wanted to be nice, and then did a 180 then too! He had held her hand and said something time and when you thought something good was going to go on, he just insulted her. I was so shocked.

So when he became totally nasty, I was hoping that Jonas would get rid of him (lol). When she found out she was pregnant, I thought for sure she was leaving him. I couldn't believe she went to him to ask him to come home, and he just went as easy as pie. Yes, the writers pulled that one out from somewhere! Cause it made no sense. Katherine even said her dreams are dead with Moray, and she said it right in front of Moray too.

This is a by-the-way, but I personally feel Katherine would have made a better wife than Denise. Denise was all about work and not only that, but while she may be smart business-wise, she was very immature - like a child. I feel that if they had gotten another season, maybe things might have ended differently.

This is a by-the-way, but I personally feel Katherine would have made a better wife than Denise.

I'm not sure either one would ever completely satisfy Moray. Except for her doting on Flora, Katherine always seemed to be, "It's all about me. Me!" She had her father wrapped around her little finger (... and as father to an only child, a daughter, I know how that happens!) and she wanted Moray to keep her happy too. I saw no other interests other than manipulating people. No hobbies, life ambitions, gardening, or whatever.

Denise, as a shopgirl was more appropriate socially for Moray - and by that I mean a shared background within their social class. I'm not advocating "knowing your place," but how much common backgrounds can ease some of the edges of a relationship. Katherine would be jealous of the Paradise store as "mistress" whereas Denise would understand the time and drive applied to the business.

But Denise, as written, was full of ambition. And Moray, in his time, place and social setting was not ready for an empowered woman, one of the undercurrents of the series. It would have taken just as much adaptation skill for Katherine or Denise.

However, when you get the notice to "wrap it up with a Paradise bow" because there won't be another season, well, then you get the atypical, for their characters, outlook for everyone of the finale.

On my own by-the-way, clumsy as the final episode may have been, I was at least happy that the producers knew there'd be no next season and could write conclusions for everyone.
