I think it is fairly obvious that the cast only works there wen they are filming. I noticed that they never really do much work when there. Tom and Jax pretend to make drinks at a bar that seems away from the actual dining area. I guess the restaurant is real but my question is do they close it during filming and just fill it with extras? The cast gets in these screaming matches in the restaurant and the people sitting at the tables just act oblivious to it all.
shareThe restaurant is real and they actually do work there when they aren't filming. Just not very much anymore. When they are filming, they have signs outside warning customers they are filming.
I went last summer while on vacation and it is a fully functional restaurant and bar.
They had a n0t0ce sign outside saying there was filming inside but it was busy so we went another day and there was no sign so much less busy. I saw no staff I recognised all.
Yeah the bar is near the entrance and the dining tables aren't "right" there" either. I think drink and appetizer tables are near the bar. To eat a full meal with waitress service, I think, are in more separate parts of the building away from Jax's bar. I can't remember exactly b/c it's been so long but there are separate parts of the entire restaurant, including an outside patio (I think, at least I swear it exists, could be wrong though LOL).

Been there for a birthday and saw Jax working. That was almost 2 years ago though. There are 3 bars. Two inside and one outside I think. The bar that's usually shown is the one in the cocktail/bar area of the restaurant.
The food is OK. Our server(forgot her name) can be seen on the show but in the background. We also saw the managers that are on the show.
