Most of the references are given. Some of the emotional build up will be missing, such as where the characters end, since you will have missed their journey. I might be able to tell you that in one scene near the end, while standing in a semi-circle, several characters explain what they are/have become by association with one character and their single word describes both the major themes of the story (of all three movies) as well as the resolution of their individual character conflicts.
It probably will spoil some of the previous reference points if you go back and watch them because you will know how it turns out. That doesn't matter to some people, it may to you.
If you're interested, Dreamworks TV put out two short recaps of the films. They do spoil the plot, but I don't see why it wouldn't still be enjoyable to go back and see the other two at some point after watching them.
