Rapunzel and Baker
In both the 1991 teleplay and this version, the Baker learns early on that he has a sister, whom we know is Rapunzel. But they never interact, nor is the relation between them ever mentioned again. I found this to be disappointing. It would have been nice to have them meet for one minute, possibly to study each other and remark how different they are that it's hard to believe they're related.
