If they weren't recording the video chats (as the boyfriend said several times) then how were we able to watch them ?

I agree with the prior poster, he is recording the sessions and lying to her about it.
It's stated that they knew each other as kids on an Army base. I took this as an indication that he is probably working for the military and/or some kind of secret government agency. His bosses are going to want progress reports and such. The videos are part of that.

this is my fav segment of the movie. It was actually pretty well done.

I agree.... great segment, was pretty impressed with the whole movie actually. It kept my attention.
