Oh wow a bloodspurt oehh that's realy mature rating worthy. No it ain't blood spurt is 16+ ( dutch rating ) at maximum.

The games are a soft Mature, there's no hardcore sexual content or nudity, the violence doesn't include dismemberment or gratuitous amounts of blood (which you can turn off in most of the games, by the way), the language really only uses one f-bomb in most games, and that's the harshest of the language. Based on the second trailer, they're showing stabbings without cutting away, zooming in the camera, or shaking the camera to hide the violence, so it looks like playing the games with the blood off, and that's okay with me, because it wasn't that violent of a game series to begin with.

Also the ESRB is way harsher that the MPAA, one great example is: 1 use of the f-bomb (just one, nothing else with f-bombs) MPAA: PG-13, ESRB: M.

Yup, agree with everything but especially the ESRB being harsher. Most of the Halo games are rated M, but Halo 4: Forward Unto Dawn was rated TV14 despite having MORE gore and mutilation than any of the games (meaning it was not dumbed down for live-action, and it doesn't look like Assassin's Creed is either).

The issue isn't the rating, but the script. It's hard to make a great movie from a video game. Some how it's better to play than just watch.
