It's not about a brave assassin/knight/warrior going around killing bad guys to save good guys. It's about a normal guy who is "Remembering" what his ancestors did.
The main character is never in danger whatsoever, so there is nothing at stake.
And who was Desmond at the beginning? An assassin, knight or warrior? Because if I remember correct, he was a bartender.
Callum is in danger. In even more danger than Desmond was. If Desmond escaped from Abstergo (at all, not to Assassins with Lucy's help), he would just forget about all of that and live as before as a normal person. Because he was officially live. But Callum is officially dead after his death injection, and Abstergo is using this fact to keep him. He cannot escape because, like Sophia said, he doesn't exist (on papers). So Abstergo could just kill him if he refused to work for them, and no one would ever care. And if he escape from them, he wouldn't have a normal life, and would be forever followed by the police forces if detected, because he was executed at the beginning of the film.

Desmond becomes a walking target throughout the first three games. The subjects suffer from bleeding effect. Which makes them a threat as they can fight like their ancestor.

It's like the Xmen franchise, where some regular guy in the future sits down and thinks about what his relatives did thousands of years ago. Guy himself isn't an Xman, he just dreams about it. Zzzzz
