That is the problem with most of these theories....they seem to be pulled right out of the speaker's asses.
I mean that was obviously a poster of a skier. A minotaur? STFU!

Are you a bug Bill Murray?
I had the same reaction. Minotaur? Talk about going out of bounds to try and provide evidence of something.
It's like, "As you can see here the walls of the maze are actually curved and not straight. Sure they look straight and they aren't curved at all but trust me, they're curved. It reminds me of the British colonies declaring independence. They're totally curved. Kubrick was obviously a genius and buried a treasure somewhere. Let's crack the code!"
The people narrating kept rambling and going off track. The segment with the guy and his kid yelling in the background should have been edited or redone.

had it paused at that moment for 3 mins and couldn't tell what the guy was referring to, glad to see I'm not alone.

You would expect at least a red circle around the point where we're supposed to see the damn cloud! They didn't do it because there is *beep* all to see.
Nothing beats the guy that left the mic a moment to go calm down his kid. Yeah, don't redo that part, we want to hear about your family life! How professional!!!
Don't think this is what the guy saw, but I found something that faintly resembles a person if you look at it closely... http://bit.ly/1siHEXz
