How does the beetle operator know that the girl is still selling bread? (Rhetorical question)

He just bought all her bread and told her to go home, then he escapes the guys trying to kill him and hides out under a truck in some remote backyard. What would make him think she is still selling bread? (Again, rhetorical question)

His main goal right then would be to stay alive.

When he speaks to the boy (the one to whom he gives money to buy bread) he says something along the lines of, "if the girl is there, if she still has bread, buy all of it..." So it's clear he realises she may well have gone. I imagine that after some minutes of hiding under the car he became worried that the girl might have picked up the bread and attempted to re-sell it (as she did). He probably understands that the young girl, as someone growing up in poverty, would be canny enough to pick it up and sell it again.

I do think you raise a fair point but I think it's just about capable of explanation.
