I was a little surprised he didn't take the shot from the top of the ridge after he sent the truck down on the guy... I thought well, maybe that would be boring to him at this point, but he's never really seemed all that concerned with the hunt throughout the movie, so I was a little surprised, but I guess that might have been too easy?

Nah, he's definitely a sadistic bastard, enjoys the hunt, and you can see him taking his time on more than one occasion. Makes him chuckle.
When he re-appears, in the new truck, he stops for a short while to let Paul get back in his car, so they can have a chase. He gets his kicks by terrifying his victims.
When he's driving after the German Girl, and she's alone on foot, he could definitely have got to her earlier, but he's just having too much of a good time.
I suppose there's also the fact that he likes to capture them alive when he can, so that he can take them away to his cave.
