She has a pronounced underbite, so her lower jaw is forward of her upper jaw. Here in America, a lot of successful actors/actresses get that sort of thing corrected through orthodonture (if possible) or surgery.
I don't know where you live, but keep in mind that we Americans have been conditioned to expect beauty in most entertainment - particularly when it comes females, and especially when the lead character is a female! Personally, I like faces with "character" - be they male OR female. I will say, however, that I don't find Charlotte Gainesbourg (the mature "Joe") to be attractive. On the other hand, I might just be responding to her character in this movie - who I found to be repulsive in every way. I've seen a few VonTrier films now, and it seems sometimes like he goes out of his way to make his major female characters either dull and/or ugly.
I'm a big fan of Charlotte Gainesbourg, ever since I saw her in Jane Eyre, she's a very good IMHO, and I think it's sad how so many people ignore that and just focus on the physical "flaws".
