Emma has dumb blonde moments, and is a tad snobbish, but I think it's pretty extreme to call her the epitome of the dumb blonde spoiled princess stereotype. She has a job, working at a food stand, so you know the money she makes is peanuts, and she has never complained about it.
But getting back to topic, it could simply be that the writers are trying to do kafka comedy, and just aren't very good at it, except in the case of Bertram, whose pain and suffering has always been hilarious. I do love this show, but it's nowhere near as well written as, say, Victorious, where if you shift the focus just a little bit, it because extremely dark very quickly.
