There are a lot of people who feel the George & AB pairing was wrong/random. I initially really disliked it too but by the end I did think they were kind of cute together. I do think part of the problem was that it was so rushed because of the shortened season. Maybe if we'd had a full season to build up to it, to see the relationship develop more naturally, it might have been better received. Another issue was also that it was too contrived to have all of the main characters end up together, a lot of people didn't like that and I'll agree that was part of my issue with it as well. That's one thing that wouldn't have changed no matter when they got together. The third issue I see is that some (myself included) didn't like that putting George and AB together meant AB was getting another one of Lemon's cast offs. AB is a beautiful woman and a good person so it annoys me to think she can only be with men that Lemon doesn't want/is no longer with, I think it just sends a bad message.
I do prefer Lavon with AB and AB with Lavon but that was never going to happen. The show runner, Leila Gerstein, said from early on in season 1 that she thought Lavon and Lemon were an "epic couple" (her exact words) so while it could be argued she didn't know exactly who she was going to have Zoe end up with, it's unlikely she ever really considered anyone as end game for either Lavon or Lemon other than each other. It's too bad because I really did think Lavon and AB were adorable together and made a good couple.
I've never been a Tansy fan so I had no desire at all to see George end up with her. I'm not much of a Lemon fan either although she did get slightly better by the end of the series. It would't have bothered me to see she and George get back together. The person I actually liked Lemon with the best was probably Peter.
What I actually wouldn't have minded seeing would be Lemon being single (with a boyfriend but not married) but happy and successful running Fancy's, while Zoe was married with a baby (and still a doctor of course). I thought it would have been a nice contrast from who the characters were when the show started when Zoe was the one who was more career minded and relationships were just an afterthought and Lemon had no intentions of having a career other than to be Mrs. George Tucker. They were both immature in their own way when we first met them and I think my idea would have shown a lot of growth for both of them. This was also very unlikely to ever happen though because no matter when the show ended I think Lelia Gerstein knew she wanted to have all the main characters settled, "happy couples" as AB says when they are all having brunch together.
Lemon/Lavon was rushed although maybe not as much as George/AB just because they had a history. It is another reason why I would have liked to have another season though. Yes I want to see Wade and Zoe with their nameless baby (sorry, that's a sticking point for me with how the show ended), but I also would have liked to have seen what happened with AB/George (how long could they keep up the long distance thing, does she move to Nashville, does George decide again BlueBell is home), and how Lemon/Lavon cope with really being together for the first time (they hid their relationship the first time around and Lemon was still with George, then they got married pretty quickly for a couple who had only really been together a short time). I think there were plenty of stories left to explore with just those characters not to mention all the other characters like Brick, Rose, etc.
