Am I the only one who was kind of suprised that we were never introduced to her dad or the man she originally thought was her dad and the man she looked up to most in the world and why she wanted to become a doctor in the first place

The dad who raised her is in several episodes?

Zoe's dad, or who she thought was her dad until she came to Bluebell, Ethan Hart, was in 2 or 3 episodes near the end of season 1. It's true we never see him again though after that. The actor who played him is Gary Cole.
