Who were the nonactors?

I keep hearing that Payne used several of them in this movie, and I don't doubt it given how "authentic" many people looked. But it it basically everyone except the people we recognize? Or just a few extras? Or something in between?

If I had to guess, I'd say Woody's old girlfriend. Her dialogue delivery seemed rehearsed to me. On the one hand, it made the character feel a bit more real - less Hollywood - but on the other, I just kept wondering if she was just someone they'd found on location.
