I was just wondering why is that the guy that was given Luke's shoes was killed with his throat slashed.

Because it can be really dangerous for a homeless person to have nice stuff- other homeless people will steal it and use violence to get it. Even non-homeless view the homeless as easy robbery victims because the homeless generally are malnourished and sickly. So any type of thief would be quick to steal the boots.
