Where was the witch's heart kept all those years? I must have missed that....

That was the twist... It was in Vin, hence his immortality. The one the Priests had was actually his, and therefore the fear about destroying it. It also made the Witch's curse make more sense. As she was dying, giving him immortality as a 'curse' when she probably would have just killed him, turned out to be a ruse in order that her heart remain safe so that she never really died. His immortality was actually her cunning last-minute plan to save herself! ;-)

Not exactly. The Witch Queen's immortality was inside Vin, but the heart itself was being held by the Axe and the Cross guys. I don't believe it discloses the exact location, but was probably a church or something. Quiet and out of sight.

to more specifically answer your question:

When Kaulder (finally) went into that memory he saw:

His body badly burned, slumped before the queen. Remember, she cursed him by reaching into his chest, and taking his heart,
(which was btw, not completely apparent at the time)
But during the memory, he saw the guys find him and the dead queen - he saw the Dolan go up to the queen and see her heart still beating.
The Dolan pulled it out and drive the sword into it at the urging of the others - at that
moment, the burned remains of Kaulder screamed out in pain.
Then the Dolan realized what the queen had done; to kill the heart would be kill Kaulder since she had ripped his heart out at her death . . .
