I'm guessing because it's a parody of 70s martial arts films. Those films mix and match Chinese and Japanese cultures a lot.

You know I've seen a couple of kung-fu flicks featuring Chinese ninjas. I always assumed that there was a Chinese martial art similar to ninjutsu.

This. Remember in the movie, when Black Dynamite had flashbacks from Vietnam, and referred to the kid he killed as Chinese, and how he couldn't understand his final words because he didn't speak Chinese?

I know it's a dirty game, but it's the only one The Man left us to play.

Well first of all ninja is replacing another world... When they said there is nothing worse then ignorant Ninjas, you change the letters and you get what they really mean but don't want to say.

There's a movie starring Andrew Dice Clay and Terri Hatcher called Brainsmasher: A Love Story. You should really see it. It's damn-funny and imaginative. And it relates directly to what you've addressed.
