The guy is just a great actor and is proving it more and more with every year. All three of his performances with Steve McQueen (Hunger (2008), Shame (2011) and 12 Years a Slave (2013) - if you haven't seen any of these, watch them!) show that the guy is top class and has a great range. I saw this a day after 'X-Men: Days of Future Past' and seeing such different performances was amazing. But the fact that he created such a great character with a big paper-mache head covering his face is something else if you ask me.
His performance in the scenes that you're referring to at the end is almost a separate performance from the rest of the film but in a great way, really showed the effect that the head had on Frank. I wasn't actually expecting the film to delve into the theme of mental illness but felt that it handled it really well and really added to the film and Fassbender's performance without appearing as a gimmick like you said.
It's my favourite film of the year so far but oddly, due to its quirky nature, I can only think of one person that I'd actually recommend it to. Normally people would recommend their favourite film to everyone, wouldn't they.
"God, when I meet you, I'm gonna be pretty. If it's the last thing I do. I'll be a beautiful angel."
