I'm a little confused by the ending-spoiler-

Did Julian get his hands cut off or was it another trippy dream sequence he was having?

Also I kind of feel bad for Julian, he seemed to be the only one with reason in his screwed up family.

I read in trivia there was an added scene in the screenplay where Mai is feeding his armless self pudding... So nope, don't think it was intended as a dream

The angle of vengeance had to set right everything he saw as wrong. Jillian had to pay for his crimes sadly.

He wanted to have his hands cut off as punishment because he used them to kill his father. The Asian guy represents God hence the title Only God Forgives

Well, there's that, but also Julian (before losing his nerve) was involved in an attack on Chang's household. I would think that in Chang's mind, that's probably more present. Why would Chang care if Julian killed his father a decade ago in another country?
