Is there an explanation that I missed why non of the characters switch genders during the first two rounds?

Somehow conveniently all men switch with the other men and vice versa.

I also think that mainly the women would have had an objection to that and asked
about it.

Introducing the gender bender aspect earlier could have made it more hilarious.

I wished it was less confusing/fast paced in general and set the scene a bit better.

I think it was made on purpose to not confuse the audience too much and not create too much chaos that it would be too over-the-top. There is still the twist at the end (spoiler alert) where we find out that it was Beatrice in Forbes' body this whole time so there's that. I wouldn't consider it a plot hole as it is convenient, yes, but not an impossibility.
