Why can't another Network pick this up?

The simple answer:
network pickup is an urban myth.
Especially with the time passed. Legal bureaucracy, actor sign-up, costs and re-investment in rebuilding the stage-scenes and equipment make this virtually impossible. At the same cost tv-networks can invest into a new franchise, ensuring the powerful element of novelty. And humans are intrinsically curious.
In principal, Flashforward in 2012 doesn't face the competition it did in 2009 anymore. It is an amazing show right up there with 24, Heroes, Lost.

It certainly deserved one more season, but yeah it will never happen.

I thought the same thing. It is right up there with Lost, 24, Alias and Heroes. The storylines are profound, well interwoven, extended over many episodes and are suspenseful. Everything you would expect from modern scripted serialized dramas.
But I also learned that there was a 4 month hiatus during the airing of FF. Visit the wikipedia page. At least the overall tenor was more than positive.

Well at least there's no need to rebuild the FBI building which was the main stage since it exploded. And if we guess that Olivia and Lloyd got together they would maybe move to a new house so no need to rebuild that stage either. There aren't many other stages left that were important and need to be shown again.
But yes, I too believe it's highly unlikely this will continue.
"urban Myth" is wrong. An example here is that Cougar Town was dropped and automatically picked up by another network just last year.
So this does happen, but it is rare.
Does it happen 3 years later? No. FlashForward is done. Too much time has passed. Not only that, but the actors have all gotten other gigs.
I wouldn't say that it can't happen, recently we've had news of several shows coming back (Heroes, X-Files, Twin Peaks), some have had movies for closure (Dead Like Me, Veronica Mars) or have continued in other media (Buffy, Angel) so there's always a chance. but sadly it doesn't seem too likely right now. but there's always a slim hope at least
