When defense is told they cannot use the hospital records in court to show the doctor is lying even though he says she was only restrained 30 or so days, and the records agree with Lisbeth it was 381... why can't they use the records? They don't say, but do they in the book?

That evidence was being used to question Teleborian's character (consequently, implying that he was lying and should not be a witness). Since the evidence was from many years ago, the judge ruled that that evidence is inadmissible towards revealing Teleborian's present character.
Later, of course, they use the current records that he had written about Lisbeth to prove the same. This was allowed because the evidence was very recent.
I haven't read the book.
