Did you notice how the race of two-eyed minions were portrayed as the intelligent leader types and the one-eyed race were the idiotic screw-ups? Even in the trailer for DM2 where the three minions are singing Barbra Ann, it's the lone one-eyed minion that annoys everyone and eventually gets punched out. Clear cut racism.

having 1 eye as opposed to 2 seems to be more of a disability, so perhaps this movie is anti-physical disabilities.

Since the minions are the same race it clearly isn't a case of racism. (It could however be a case of dicrimination, but that's not in your post.)
