question about Jack, Barbossa and Ponce de leon

There is a scene when Jack & Barbossa are fighting in Ponce de leon's ship. They come to rest on his Ponce's bed to talk over the map. When the map is moved from Ponce's skeleton, Ponce's head shifts towards Jack. Although a skeletal remain, is the spirit of Ponce de leon alive maybe at that moment?

This is a really good question. I always wondered why the skeleton's head moved when Jack touched the map....and what would've happen if he had taken it.
