Ok I missed it and am beyond confused...why doesn't he speak? I got confused as I remember him speaking in the helicopter at the beginning?

Because he's a bit emotionally stunted.

Yeah, they built that part up in the trailer as, "Woody doesn't speak." But then in the opening scene he talks more than anyone while he's flying the plane.

Yes I agree with you and the original poster, it was confusing at first that Woody didn't speak to much when he clearly spoke quite a bit while piloting the plane and even on the tarmac at the beginning of the movie.
